Since we have so much squash we are trying new ways to cook it. My family loves this, I will have to double the recipe now we just don't have enough with one.
Recipe:
Zucchini Pie
1 refrigerated cresent roll
2 cups sliced zucchini
1/2 c. chopped onion
2 C. mazzarella cheese
2 T. Parsley
1/4 t. pepper
1/4 t. salt
1 t. oregano
2 eggs
Roll out cresent dough in deep dish pan. Cook zucchini and onion in a little butter until soft. Season with parsley and oregano, salt and pepper.
When cooked add 2 eggs beaten and c. cheese. Mix all together.
Bake in oven 375 for about 25 minutes.
